Kuih Tepung Gomak

INGREDIENT A
(for the dough)
- 300gm glutinous rice flour
- 1 cup water
- Salt to tase
INGREDIENT B
(for the filling)
- 200gm palm sugar
- 1/2 cup castor sugar
- 1/2 cup water
- 300gm fresh grated coconut
- 2 tsp wheat flour
- 2 pcs pandanus leaves
INGREDIENT C
- 200gm Serbuk Kacang Hijau Cap Bunga Rose
- Water, for boiling
INSTRUCTIONS
- To make the dough, mix the dry ingredients then add water little by little and knead until it becomes a dough. Set aside.
- Boil palm sugar and castor sugar with the water until everything dissolves.
- Add grated coconut and cook until it's almost dry then add the wheat flour mixed with a bit of water.
- Use low heat and keep stirring until it is almost dry but still quite moist. Let it cool.
- Take a bit of the dough, flatten it and add a bit of the sweet coconut filling. Then, seal the dough and turn it into a ball. Put the ball into boiling water.
- Repeat the process until all the dough and filling are finished.
- Boil all the dough balls until they start floating. Remove from water and drain them.
- Coat them well with Serbuk Kacang Hijau Cap Bunga Rose so they don't stick to each other.
- Ready to serve.
